Ingredients for this recipe:
– Sea bass (Mediterranean sea bass)
Recipe preparation:
- First, scale, gut, and season the fish (salt, pepper, aromatic herbs).
- Place them in a grill rack and set the rack over the embers of the barbecue.
- Avoid direct contact with the flame; the skin will be crispy rather than burnt.
- Cook for 7 to 8 minutes on each side, the flesh will remain tender, then drizzle with garlic-infused olive oil.
- You can also grill in the traditional way. The fish is seasoned and lightly oiled.
- Score the fish in a 10 and 10 crosshatch pattern, then finish cooking in the oven on a baking tray. Serve with a compound butter.
