La Clape has preserved from its Pyrenean héritage its limestone soils. L'Hospitalet benefits from one of the sunniest climates in France, and the radiance of the sun bestows upon the wines a unique luminous balance. Biodynamic farming allows the full expression of this resonance between the environment and the terroir, between the richness of the fruit and the tension of the structure. The wines display a freshness and a salinity characteristic of limestone terroirs.
The Grand Vin white is a unique blend of the local and emblematic grape variety of La Clape, the Bourboulenc — a historic variety native to the Massif de la Clape — blended with Grenache Blanc, Viognier and Vermentino.
A portion of the wines is aged in barrel (70%) and the remainder in tank in order to preserve freshness.
The Grand Vin rouge is a blend of the finest plots of Syrah, Mourvèdre and Grenache Noir. Each is vinified separately and the blend is assembled in February. The wine is then aged in barrels for twelve months. Bottling is
carried out exclusively on a fruit day of the lunar calendar in order to respect the rhythms of biodynamics. The terroir of marl and hard limestone lends both the white and the red a great freshness and a mouth-watering texture that are the hallmarks of a very interesting ageing potential.
