The terroir of the Clos du Temple draws its singularity from its geological genesis. Shaped over 250 million years by tectonic forces, it came into being during the Hercynian orogeny that gave rise to the Massif Central and the Montagne Noire. The contact between two geological origins — schist and limestone — and the hilly relief is the source of a complex underground water circulation network, fostering an exceptional natural water supply for the vineyard and the emergence of a spring of great purity. Its altitude of 240 metres, combined with its south/south-west exposure, contributes to the production of a perfectly balanced wine of great aromatic freshness. The 12 hectares of the Clos du Temple vineyard are made up of 11 small plots clinging to the hillside, naturally enclosed by the relief and vegetation. Very old Cinsault, Grenache Noir and Syrah represent the main grape varieties of the Cabrières denomination. They are ideally suited to the well-exposed, filtering schist soils of the Clos du Temple. Viognier brings its originality and a pleasant aromatic complexity to this cuvée, and Mourvèdre provides the finishing touch that elevates the wine.
