Vinification et élevage
The vines receive careful attention and frequent manual interventions (pruning, bud removal, leaf thinning, cluster thinning, manual sorting at harvest), following environmentally respectful practices. The vineyard is trained on espalier, to generate an optimal leaf surface for grape ripening. The vines are planted at a relatively high density of 5,000 to 6,000 vines/ha, which allows optimal control of vigour. The care given to the vineyard aims to obtain a healthy harvest at moderate yield, making it possible to draw out the quintessence of the grapes' qualitative potential. The harvest date is only triggered once the grapes have reached their optimal ripeness. The grapes are harvested by hand and undergo low-pressure pneumatic pressing as whole clusters upon arrival at the winery. After a light cold static settling, the musts begin their alcoholic fermentation in tanks and are then quickly transferred at mid-fermentation into new barrels. Malolactic fermentations are carried out according to the characteristics of the vintage. Barrel ageing lasts 7 to 8 months (until the Spring equinox) with regular lees stirring. After a light fining, the wine is bottled unfiltered. The wine is aged in bottle for several months before release.
