Château La Sauvageonne Grand Vin comes from a striking terroir of ruffe and schist in the heart of the Terrasses du Larzac. The marked differences between day and night temperatures allow the grapes to ripen slowly, producing an intense, deep and perfectly balanced red with aromas of black fruit and garrigue herbs.
Château La Sauvageonne Grand Vin draws its character from a unique terroir of ruffe and schist, which gives the vines an excellent water balance and allows the grapes to ripen slowly. The cool nights of the Terrasses du Larzac preserve aromatic freshness and colour, producing a wine that is both powerful and refined, marked by black fruit, garrigue herbs and a long finish with notes of cocoa and mocha.

Tasting notes
Colour
Deep, brilliant ruby colour
Nose
Intense aromas of ripe black fruit, blackberry, garrigue herbs, mint and liquorice, with hints of cocoa and mocha.
Palate
A direct opening, full and generous on the palate, with ripe, well-integrated tannins. Black fruit and garrigue notes lead to a lingering finish with hints of chocolate and mocha.

Winemaking
- Hand-harvested from low-yielding vines.
- Healthy, ripe grapes selected before being placed in tanks.
- Each grape variety vinified separately in temperature-controlled tanks.
- Maceration for 20 to 25 days to extract colour, aromas and structure.
- Aged for 12 to 16 months in new 225 L barrels.
