With Héritage 873 – Minervois, Gérard Bertrand reveals the history of the great terroirs of southern France. The number 873 refers to the Château de Minerve, named after the Roman goddess of wisdom, which in turn gave the Minervois terroir its name.

This wine comes from a terroir of sandstone, limestone and stony terraces forming a natural south-facing amphitheatre. All the grapes are harvested exclusively by hand. After complete destemming, each grape variety is vinified separately to express its full potential. Following malolactic fermentation, the wines are blended and then aged for approximately 8 months in 225-litre Bordeaux barrels, before light fining and a period of bottle ageing.
