Vinification et élevage
Héritage La Clape Rouge 2020: Slow maturation and late harvests, from late September to mid-October, are the secrets to obtaining ripe, healthy and concentrated grapes. This also promotes the extraction of color and aromas during fermentation and maceration. The grapes are harvested manually and transported to the cellar in a vat. The grapes are destemmed, then placed in stainless steel vats for macerations of around 20 to 25 days. The wines are then racked and placed in barrels for a period of 8 months. Héritage Saint Chinian 2020: The work begins in the vineyard with a selection of the plots most suitable for producing this type of wine. The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks. Pressing is carried out, then giving way to malolactic fermentation. 33% of the wine is aged for 9 months in barrels, the rest being kept in vats. Héritage Les Aspres 2019: The work begins in the vineyard with a selection of the plots most suited to producing this type of wine. The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks. A pressing is carried out, then giving way to malolactic fermentation. Two thirds of the wines are aged for 9 months in barrels, the rest being kept in vats to be blended in the spring. After a light fining, the wines are bottled and kept for several months before being marketed.

Heritage La Clape Rouge: A deep color. The nose reveals the richness of its aromas with blackcurrant jam, cocoa and vanilla. Concentrated and powerful, the mouth is velvety. Héritage Saint Chinian: The color is a deep red. The nose offers an intense, fine and complex bouquet with notes of cocoa, bay leaf, tapenade and black pepper. The palate is rich and smooth with pure and complex flavors of black fruits and sweet spices. A beautiful long and velvety finish. Les Aspres Heritage: The color is intense garnet with purple highlights. This wine opens with a beautiful cherry fruitiness with notes of liquorice and fine wood. On the palate, gray pepper and nutmeg accompany a firm but not harsh tannic structure that brings a lot of breadth. A generous and ample palate with a persistent finish.
