- The vineyard is cultivated organically and biodynamically.

- Château des Karantes is an exceptional vineyard situated in the heart of a small valley, surrounded by the rocky cliffs of the Massif de la Clape, classified as a natural park
- The estate overlooks the Mediterranean Sea and offers a remarkable panorama of the coastline and hinterland composed of garrigue and pine forests.
- The climatic conditions are exceptional: both in terms of the duration of sunshine, the quantities of heat stored during the day by the limestone and released at night to the grapes, and the effect of the Mediterranean Sea which tempers the summer temperatures.
- Since the 2017 vintage, the estate has been certified AB ( organic wine ) and DEMETER ( biodynamic farming ).

Winemaking and ageing
Harvesting begins following regular ripeness checks and berry tastings as the harvest approaches. The grapes are harvested by hand and sorted both in the vineyard and upon arrival at the winery. Each grape variety is vinified separately: the Carignan and a portion of the Syrah undergo whole-cluster maceration, while the Mourvèdre and Grenache undergo traditional maceration. At the end of winter, the different grape varieties are blended and the majority of the wine is transferred to French oak barrels for ageing for around 12 months. The remaining wine is aged in vats to bring freshness to the final blend, which takes place just before bottling
Tasting note
The colour is a brilliant ruby. The nose, intense, is dominated by
clear aromas of fruit (black cherries and blackcurrant), of
flowers (violets) and soft spices. The palate, round,
reveals silky, fine tannins underlining notes of
liquorice, gingerbread and the concentrated fruit notes
discovered on the nose. The finish, slightly saline, is
characteristic of the wines of La Clape.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.
The alcohol content (% vol.) varies by cuvée and vintage; it is listed in the product’s technical data sheet, below the description.
The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
