Winemaking and ageing
Harvesting is triggered on the basis of ripeness checks, analysis of polyphenols contained in the grape skins and daily tasting of the berries as harvest approaches. The harvest is done by hand, and the grapes are transferred using harvest bins to the winery where meticulous sorting is carried out. Each grape variety and each plot are vinified separately. Part of the Syrah is vatted as whole bunches and vinified by carbonic maceration. The remaining Syrah and the Grenache are destemmed and vinified by traditional maceration. After draining the vats and completion of malolactic fermentation, each grape variety and each plot are barrelled separately. The blends are assembled after 12 months of ageing in barrels. A light fining of the wine is carried out before it is bottled.
