Wine description
The vines benefit from a semi-arid Mediterranean climate with a temperate winter variant and the vines are fully south-facing on the heights of the village of La Livinière, between 120 and 230 metres altitude.
Food & Wine pairings suggested by our chef
Best served at 16°C, with grilled red meats,
game or aged cheeses.
Winemaking and ageing
The vineyard is carefully tended to obtain grapes of impeccable quality — ripe, healthy and concentrated. Planting density is high (from 5,000 to 6,500 vines per hectare) for the most recent plantings. The vines are trained on high trellises to ensure large leaf surfaces, and yields are kept in check (below 45 hl/ha). The grapes are harvested by hand at perfect ripeness and transported to the winery in harvest bins. The different grape varieties are then vinified separately, so as to respect their individual characteristics and the potential of each terroir. The Carignan and the Syrah are vatted as whole bunches and vinified by carbonic maceration for 15 days. The end of alcoholic fermentation takes place at low temperature. The Grenache is destemmed and its maceration period reaches 3 weeks. The wines are racked at the end of alcoholic and malolactic fermentation, blended and then placed in 225-litre Bordeaux barrels for a maturation period of 10 to 12 months.
Tasting note
The colour is a beautiful garnet, intense and
brilliant. From the nose emerges a complex aromatic
bouquet, where blackberry, blueberry and cherry
mingle with pleasant notes of liquorice and undergrowth. The attack on the palate is ample, fluid and smooth.
Present yet round and well-integrated, the tannins support
delicate aromas of small red and black fruits.
Fruity and balanced, the finish lingers on the palate with
subtle woody notes.
