Situated in the heart of the Languedoc in the south of France, Clos du Temple is born on the historic terroir of Cabrières, the cradle of rosé wines.
The terroir owes its singularity to its geological genesis.
The contact between schist, limestone and the hilly relief gives rise to a complex network of underground water circulation, fostering an exceptional natural water supply for the vineyard and the emergence of a source of exceptionally pure water.
Its altitude of 150 metres, combined with its south – south-west exposure, contribute to the crafting of a perfectly balanced wine of great aromatic freshness. At Clos du Temple, we have chosen to cultivate the vines using Biodynamics and to use the horse and the mule in order to foster the connection between the mineral, the vegetal, the animal and the human.

A perfect balance, ample, with great length, carried by a beautiful freshness. As the winery is located at the heart of the vineyard, transport time is minimal. The best free-run juices are then selected. Cold pressing (5°C) preserves the aromas and freshness and prevents the juice from colouring by blocking the natural pigments (anthocyanins). Before fermentation at low temperature, a 24-hour settling at a controlled temperature between 8 and 10°C is carried out without the addition of sulphur. The wine is aged in new French oak barrels (oak from the Tronçais and Jupilles forests) for 6 to 8 months on fine lees with bâtonnage. The wines are blended on a fruit day, according to the biodynamic astral calendar, favourable for tasting
