Description du vin
This Art Édition of Cote des Roses is the fruit of a collaboration between Emma Bertrand and one of Australia's most talented artists: Morgan Jamieson. This cuvée celebrates the Mediterranean art de vivre. Cote des Roses limited edition comes from organically farmed vineyards on a terroir recognised as an exceptional location for rosés. The combination of two soils, schist and limestone, with rolling terrain, has created a complex network of underground springs that provides an exceptional source of pure water for the vineyards. This limited edition reproduces the iconic Cote des Roses bottle with its rose-shaped base, created by a young designer from the Ecole Boulle. It is a wine to be given like a bouquet of roses!
Accord Mets & Vins proposés par notre chef
Serve between 13 and 14°C with a wild salmon tartare and Gravlax or a ceviche of sea bream, tuna or Mediterranean sea bass. Also pairs well with shellfish: langoustines, crayfish in sauce, spiny lobster and grilled lobster.
Vinification et élevage
The different grape varieties are harvested separately at the optimum of their respective maturities. The winemaking respects the individual characteristics of the grape varieties and terroirs. Following manual harvests carried out very early in the morning, when the outside temperature is still cool, this rosé is produced by the saignée method. The whole bunches are placed to macerate in a vat and the juice is extracted after a short maceration, once the colour has reached the desired level. Alcoholic fermentation takes place in the liquid phase under temperature control, in order to develop the maximum of aromas. A portion of this wine was vinified in barrels. In order to preserve all its freshness and natural acidity, no malolactic fermentation takes place and the wine is bottled quickly.
Note de dégustation
The robe is a beautiful bright pink colour. On the nose, the intensity of the fruit highlights complex aromas of strawberry and cherry, with a few notes of liquorice. The remarkable fullness and roundness on the palate are balanced by the freshness of this cuvée. Lively and elegant, the finish lingers on notes of red berries.
Conservation
Keep away from sunlight and at a constant temperature
