Wine description
This Cote des Roses cuvée celebrates the Art de Vivre Méditerranéen. The soil, highly varied, consists mainly of hard limestone from the garrigue, schist soils and also gravel brought by the rivers of the Languedoc. The climate, warm and windy ("semi-arid Mediterranean climate with a mild winter variant") encourages the ripening of the grapes and their good health, while retaining freshness thanks to altitude and the effect of the sea, which tempers the high summer temperatures. Its bottle features a unique rose-shaped base, created by a young designer from the École Boulle. It is a wine that gives itself like a bouquet of roses!

Winemaking and ageing
The grapes are harvested at perfect ripeness to express the optimal potential of the grape variety. A meticulous sorting of the harvest is carried out at picking and upon reception of the grapes. The work on the grapes takes place under neutral gas to minimise the risk of oxidation of the musts. The grapes are destemmed, cooled to 8°C and sent to the press to extract the must. Particular attention is paid to the pressing so as to retain only the finest first-run juices. The juices are then settled to a greater or lesser degree depending on the desired aromatic profile. Fermentations last between 15 and more than 30 days depending on the degree of clarification and the temperature applied. A portion of the wine is vinified and then aged in 225-litre Bordeaux barrels for approximately 4 months, while the remainder is vinified in temperature-controlled stainless steel vats at low temperature to preserve the freshness and integrity of the aromas. The distinctive character of this grape variety lies in the nobility of its aromas and the delicacy of its wines. Finally, after a light fining, bottling takes place fairly early to preserve the fresh and fruity character of the wines.
Tasting note
This cuvée has a beautiful pale robe with
slightly golden highlights.
The nose develops aromas of mango, dried fruits
of almond and hazelnut, as well as notes
of citrus, grapefruit and orange blossom.
On the palate, the barrel ageing brings
aromas of vanilla, cinnamon, fresh butter and
spices. Its finish is marked by a beautiful
minerality and a good length.
