Wine description
This cuvée cote des Roses celebrates the Mediterranean art de vivre. The soil, highly varied, consists essentially of hard limestone from the garrigue, schist soils and also gravel brought by the rivers and waterways of the Languedoc. The climate, warm and windy ("semi-arid Mediterranean climate with a mild winter variant") favours the ripening of the grapes and their good health, while retaining freshness thanks to altitude and the effect of the sea, which tempers high summer temperatures. Its bottle features a unique rose-shaped base, created by a young designer from the École Boulle. It is a wine that gives itself like a bouquet of roses!
Food & Wine pairings suggested by our chef
Best enjoyed between 15 and 16°C with roasted
or grilled meats, chicken tagine or mature
cheeses.
Winemaking and ageing
Harvested in the cool early mornings of September, the grapes underwent a very short maceration of 3 to 5 days with a cold maceration during the first 48 hours. After pressing, a low-temperature fermentation took place in order to reveal the expression of fruity aromas. At the end of the malolactic fermentation, the wine was meticulously clarified and benefited from three months of ageing in tank.
Tasting note
This cuvée is distinguished by its luminous ruby red colour, revealed by the shape of the bottle. The nose reveals aromas of red fruits – cherry, strawberry – marked by light tannins, and delicate floral nuances of iris and broom. On the palate, notes of red fruits enhanced by spicy and peppery touches, with soft tannins that reflect the finesse and elegance of the cuvée.
