• The vineyards are located on the coastal terroirs of the South of France, between the warmth of the earth and the minerality of the sea, elevated by the expertise of our winemakers.

The grapes are harvested early at the end of August due to their proximity to the Hérault coast. The harvest is carried out at night or very early in the morning in order to preserve the freshness and integrity of the berries. Upon arrival at the winery, the grapes are pressed immediately and delicately to encourage a very pale colour. The first free-run juices and press juices are discarded in order to retain only the heart of the cuvée. After pressing, the musts are cold-settled statically for 48 to 72 hours to obtain a very clear must and encourage mineral expression. Alcoholic fermentation is carried out at temperatures of 15 to 18°C to promote the expression and freshness of the aromas. The wine is aged on its fine lees in stainless steel tanks for several weeks before being bottled.
