Wine description
Already renowned before the reign of Louis XIV, it was in 1618 that the botanist Magnol, in his book Sylve Plantarium, listed Piquepoul among the most reputed grape varieties of the Languedoc. This limestone terroir bordering the Mediterranean Sea produces a fresh and dry white wine.
Food & Wine pairings suggested by our chef
This wine pairs wonderfully with
shellfish (mouclade charentaise,
stuffed clams) and crustaceans, but also
with fish (pan-fried eels, rouille
sétoise)...
Winemaking and ageing
To minimise the risk of oxidation, the grapes are harvested at the coolest time of day (night and early morning) and transported to the winery as quickly as possible. The bunches are immediately pressed in a pneumatic press.
The must is then fermented at a low temperature (16 and 18°) to preserve the aromas as much as possible. The wine is aged in stainless steel tanks on fine lees before being bottled in spring.
Tasting note
The colour is pale yellow with green highlights. The nose delivers a rich bouquet of citrus and hawthorn notes.
The palate is fresh and indulgent, with beautiful lemony flavours and an invigorating finish.
Storage
Keep away from sunlight and at a constant temperature
