Wine description
Naturae is a range of organic wines with no added sulphites, offering particularly pure, generous and indulgent aromas. Each cuvée, reduced to its essentials in composition, expresses the character and flavour of the fruit and the terroir. This wine was born from the expertise of Gérard Bertrand and his oenologists, who possess a unique knowledge of winemaking without sulphites. The wines are grown according to organic standards, which requires grapes of the highest quality. Naturae is also a vegan range for consumers who care about animal welfare. Intense and fruity, Naturae will provide you with a unique experience of the grape variety while respecting the environment. The winemaking process is precise and highly controlled, given that we use neither sulphur nor oenological inputs at any stage of the winemaking or bottling process. Upon arrival, the grapes are immediately cooled to 8°C and pressed, taking care to discard the press juices. The juices are cold-settled to encourage natural clarification of the musts and the elimination of oxidisable compounds by precipitation. Alcoholic fermentation is quickly initiated at regulated fermentation temperatures between 17 and 18°C. At the end of fermentation, the wine is racked so as to retain some fine lees, which will form the antioxidant base of the wines during their ageing before bottling. Bottling takes place fairly early in the year to preserve the unique aromatic expression of this wine, retaining all its qualities and natural character over time.
Food & Wine pairings suggested by our chef
Best enjoyed at 12°C as an aperitif, with pasta with pesto, or a green vegetable risotto.
Winemaking and ageing
The work begins in the vineyard with a precise and meticulous selection of the plots best suited to producing this type of wine (90% of the final result stems from this precision work): the health of the vines must be perfect, the foliage must be healthy, fresh and dense, and the grapes must have an optimal level of ripeness. Indeed, the harvesting window is very narrow, as the acid/sugar balance is paramount for this category of wine. The winemaking process is highly complex given that we use neither sulphur nor oenological inputs. The grapes are immediately pressed and cold-settled to encourage the natural stabilisation of the oxidisable compounds in the musts through precipitation. The alcoholic fermentation then proceeds quickly and takes place under a neutral atmosphere. Fermentation temperatures are regulated at 18°C. The wine is clarified by racking before malolactic fermentation, then racked again and kept cold. Bottling takes place fairly early in the year to preserve the aromatic expression. Ageing therefore takes place in the bottle.
Tasting note
This cuvée has a beautiful luminous robe with golden highlights and reveals delicate notes of citrus and white flowers. This Chardonnay is round, harmonious and offers delicious aromas of vanilla and gingerbread.
This wine is remarkably elegant and light, with a very fine balance.
