Red wine and food pairings: which wine should you choose for each dish?

A good red wine and food pairing balances the intensity of the dish with the structure of the wine. Structured, tannic reds pair with red meat and game, supple reds with mature cheeses, and light reds with summer dishes. A Pinot Noir with low tannins, served between 12 and 14 °C, can pair with grilled fish.

How do you get a red wine and food pairing right?

Matching intensity, tannins and texture

A good pairing starts with balance. A delicate dish calls for a wine that will not overwhelm its flavours; grilled meat, a reduced jus or game calls for more body. The tannins in a red wine find balance in the fat and protein of meat, while the fruit and freshness of a light red complement simpler dishes.

Texture matters as much as intensity: a rich sauce calls for a full-bodied wine, grilled meat for a red with well-defined tannins, and Mediterranean food for a wine with notes of spice and garrigue. Finally, temperature changes how alcohol, fruit and tannins are perceived: choose it according to the wine’s style, not simply its colour.

Which red wine should you serve with red meat and game?

Grilled meats, aged cuts and dishes in sauce

A rib of beef, a rack of lamb or an aged cut pairs with a full-bodied, structured red. The meat’s grilled notes complement the spices of a barrel-aged wine, while the fat softens the tannins.

Château l’Hospitalet Grand Vin red, AOP La Clape, exemplifies this style. A blend of Syrah, Grenache Noir and Mourvèdre aged for 12 to 16 months in French oak barrels, it has fine, silky tannins. Its product sheet recommends serving it at 16 °C with a rack of lamb, game birds or mature cheeses. The estate has been AB and Demeter certified since the 2017 vintage.

For grilled or slow-cooked beef, Clos d’Ora, AOP La Livinière, blends Syrah, Grenache Noir, Mourvèdre and Carignan. Its product sheet recommends decanting it an hour before serving and serving it at 17 °C with grilled, aged or slow-cooked Aubrac beef.

With roast red meats or poultry in sauce, serve Cigalus red, IGP Aude Hauterive, at 16 °C. This seven-grape blend is AB and Demeter certified.

Game birds and furred game

Game calls for a wine that can stand up to its firm flesh and intense flavours. Roast pheasant or wild duck pairs with a structured yet precise red; a game stew or slow-cooked dish calls for a deeper cuvée with ripe tannins and spicy notes.

Château La Sauvageonne Grand Vin, AOP Terrasses du Larzac, blends Grenache Noir, Syrah and Carignan from volcanic terroir. According to its product sheet, its spicy nose, with notes of garrigue and jammy fruit, and its silky tannins pair with grilled Aubrac meats, regional dishes and Larzac cheeses. The estate has been AB and Demeter certified since the 2017 vintage.

Which red wines pair with mature cheeses?

The choice depends on the cheese’s strength and texture. A mature Comté, a pressed sheep’s milk cheese or a Larzac cheese pairs with a supple to structured red: the cheese’s fat softens the tannins, while notes of ripe fruit or spice complement its mature flavours. Several of the estate’s product sheets, including those for l’Hospitalet, Cigalus and Domaine de l’Aigle Pinot Noir, mention mature cheeses.

The pairing is not a given: a very salty or blue-veined cheese can make a tannic red seem harsher. In that case, choose a fresher, less extracted cuvée or a white wine.

Which light reds should you choose for summer dishes?

Mixed salads, tapas, grilled dishes and Italian food

Fruity reds with low tannins, served lightly chilled, pair with tapas, charcuterie, mixed salads, grilled vegetables and Italian food. Their freshness keeps the meal light, while their fruit complements Mediterranean flavours.

Le Chouchou, an AB-certified Vin de France, blends Grenache Noir, Syrah and Cinsault. Aged for three months in vats, it has an alcohol content of 11% vol., strawberry and cherry aromas, and soft tannins. Serve it chilled at 11 °C; its product sheet recommends it as an aperitif or with tapas, a charcuterie board or Italian food. Other cuvées in this style can be found in the Light Reds collection.

Can you serve red wine with fish?

Grilled fish or fish in sauce with a low-tannin Pinot Noir

Yes, provided you choose a fresh red with low tannins. Firm-fleshed fish, such as tuna or red mullet, grilled preparations and certain sauces stand up to red wine better than delicate fish. Pronounced tannins can leave a metallic note when they come into contact with iodine, so a supple wine is preferable.

Domaine de l’Aigle Pinot Noir, IGP Haute Vallée de l’Aude, comes from a high-altitude vineyard. According to its product sheet, its soft, fruity palate and fine, silky tannins pair with grilled fish or fish in sauce, as well as grilled red meat, roast poultry and mature cheeses. Serve it between 12 and 14 °C. It is AB and Demeter certified.

At what temperature should you serve red wine?

Serving temperature depends on the wine’s body. Too warm, a red can seem overly alcoholic; too cold, its tannins become harsher and its aromas are muted.

Avoid the ‘room temperature’ of a heated room, often above 20 °C. A short spell in the fridge is enough to chill a light red; a young, structured wine benefits from being opened a little in advance.
