Wine description
Castellum refers in the Middle Ages to the central castle Castrum, a fortified village situated on the heights of Languedoc. The name of this cuvée evokes the fortifications of the Cité de Carcassonne, listed as a UNESCO World Heritage Site.

We are fortunate to have on a clay-limestone plateau of the Estagnère estate a plot of mature Sauvignon (15 years old) planted at the ideal density (5,000 vines/ha) with quality trellising allowing a fine leaf canopy, the driving force behind photosynthesis and grape ripening. The oceanic influence provides a cooler climate and preserves the aromas of Sauvignon, which are sensitive to intense heat. Together with Gérard Bertrand, we saw the opportunity and potential to create this exceptional cuvée. The technical choices, in particular avoiding leaf-stripping to keep the grapes protected from the sun, as well as the choice of biodynamic practices, allow this great Sauvignon to fully express both the grape variety, the terroir, and an exceptional minerality and freshness. The first vintage of this 100% Sauvignon Blanc cuvée, of which a portion (2/3) is aged for 8 months in oak barrels, will rival its international counterparts.

A great Sauvignon Blanc that expresses itself through an intense aromatic profile of exotic fruit and flint notes, and a fine acidity worthy of the greatest Sauvignons. 2022 is a vintage already noted as one of the greatest of the last 50 years, with ideal weather conditions and perfect balance.

Winemaking and ageing
The work begins in the vineyard with great care to obtain healthy, well-exposed foliage. The grapes must reach an optimal level of ripeness. A plot selection is carried out on the clay-limestone plateaux of the Domaine de l'Estagnère.
Tasting note
The colour is brilliant with green highlights. The nose is frank and
reveals great richness and aromatic complexity with
intense aromas of boxwood, blackcurrant bud, white
flowers as well as mineral notes and exotic fruit. A very fine balance marked by roundness and
length on the palate, typical of the greatest Sauvignon wines.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.
