Food & Wine pairings suggested by our chef
To enjoy as an aperitif or with grilled fish and
shellfish.
Winemaking and ageing
The harvest is manual and the different grape varieties are harvested separately. The grapes are cooled to 8°C and immediately pressed gently in order to extract the finest juices. Fermentation is carried out at controlled temperatures and lasts approximately 2 weeks. At mid-fermentation, a portion of the must is transferred into new French oak barrels for 6 months. The wine is then aged on fine lees with regular stirring.
Tasting note
The robe has a beautiful golden colour. The nose is
very complex and extremely fragrant, revealing
aromas of hawthorn, almond and floral notes of
violet and yellow fruits of mango and apricot. The
oaky side of this cuvée is very delicate, with notes
of gingerbread and tobacco. The palate is rich and
unctuous with great richness, amplitude and a
beautiful freshness.
