Wine description
In 1886, even as Baron Haussmann's architecture was beautifying cities, a legend was reborn: that of Mirmanda, the Celtic city populated by enchanting fairies, in a poem called 'Canigou' evoking the mountain dominating the vineyard of the Côtes du Roussillon Villages Les Aspres appellation.

Winemaking and ageing
Work begins in the vineyard with the selection of the plots best suited to producing this type of wine. The grapes are largely harvested by hand. A double sorting system is carried out both in the vineyard and at the winery. Vinification is traditional, so the grapes are destemmed before the maceration phase begins, which lasts between 3 and 4 weeks.
Pressing is carried out, followed by malolactic fermentation. Two-thirds of the wines are aged for 9 months in barrels, with the remainder kept in vats to be blended in the spring. After a light fining, the wines are bottled and cellared for several months before being released to the market.

The robe is an intense garnet with violet highlights.
This wine opens on beautiful cherry fruit with
notes of liquorice and fine oak.
On the palate, grey pepper and nutmeg
accompany a firm yet supple tannic structure
that brings great breadth.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
