Wine description
Much respect and interest for this ancestral tradition of over 8,000 years in Georgia, which consists of vinifying white grapes in whole bunches in buried clay amphorae.
The conviction of a very fine match here between the Roussanne, Viognier and Vermentino grape varieties, the terroir and the climate to craft an orange wine. The intention to create a great orange wine for ageing, full of finesse and delicacy, balanced, with a beautiful aromatic structure typical of the Château's terroir.

Winemaking and ageing
The harvest is triggered at perfect ripeness. Each plot is vinified separately with meticulous attention to detail and daily care at the highest level at every stage. The grapes are vatted as whole bunches to undergo carbonic maceration in temperature-controlled tanks between 21 and 25°C, achieving the right balance of tannins, acidity and aromas.
During pressing, the free-run juice is separated and placed in various French oak barrels, with a nuanced selection of oaks from the Allier and the Vosges,
with light toasting. They then complete their fermentation, affirming their tannic character. The press juice is placed in clay amphorae, glass amphorae and a bi-material ovoid tank (stainless steel and wood). The
juices evolve here towards silkiness, roundness and richness.
In clay amphorae, the fruit and colour are affirmed. In glass tanks, with no porosity, the light nuances the
colours. In the stainless steel and wood ovoid tank, the lees in suspension are in constant motion and the juices
express their richness and roundness.
Each juice completes its fermentation in the ageing cellar in its respective vessel, before being racked and then aged in the same vessels for several months (between 6 and 9 months). Thus, at the end of the ageing of the 3 grape varieties, from 6 plots, with 4 ageing methods for the free-run and press juices, the blend is assembled on a fruit day with a splendid palette of nuances.

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.
The alcohol content (% vol.) varies by cuvée and vintage; it is listed in the product’s technical data sheet, below the description.
The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

As a general rule: 8-10°C for rosés and light whites, 10-12°C for more complex whites, 16-18°C for reds. The most suitable serving temperature for this cuvée is also indicated on its technical sheet.
This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.
