Wine description

Winemaking and ageing
Ballerine comes from the Limoux region, an exceptional terroir for the production of sparkling wines, which were first created at the Abbey of Saint Hilaire in 1531. This terroir is situated at altitude, close to the Pyrenean mountain range, and lends this brut rosé its airy character. The winemaking and blending of Ballerine, crafted primarily from Chardonnay and Pinot Noir, place the emphasis on freshness and tension, evoking the lightness of a ballerina.
Tasting note
The colour of the delicate pale robe pays tribute to that
of the sunsets that can be admired from the rooftops
of the Opéra Garnier in Paris. Radiant, it features
golden highlights. The delicate bubbles give this crémant
a persistent mousse. The nose, powerful and straight, reveals
subtle and indulgent aromas, with notes of red fruits
and white flowers. The attack on the palate is precise
and elegant, the aromas are of great complexity. Brioche
notes blend with fruity notes of strawberry and
raspberry. The finish lingers on soft and
creamy notes

The ageing potential depends on the cuvée and vintage — it is specified in this wine's technical sheet. In general, our wines for ageing and fine wines can be kept for more than 10 years, or even over 100 years for our fortified sweet wines, whilst our lighter cuvées, intended to be enjoyed young, are best appreciated within 2 to 3 years of purchase.

The majority of our red, white and rosé wines are dry. Our natural sweet wines (Rivesaltes, Maury...) and certain crémants are sweet or semi-dry. The style (dry/sweet) of this cuvée is specified in its description.

This depends on the wine and its age, as specified on the technical data sheet where relevant. As a general rule, our powerful age-worthy wines benefit from being decanted 30 minutes to 1 hour before tasting; lighter wines, whites and rosés can be served directly.

We do not produce dealcoholised wine. However, our range offers wines with lower alcohol content: So'Vive (naturally low-alcohol organic white wine), Le Chouchou (light red wine) and Cote des Roses Red Léger. The precise alcohol content of each cuvée is indicated on its product sheet.
