Food pairings with Crémant de Limoux: a cuvée-by-cuvée guide

White Crémant de Limoux pairs with apéritifs, seafood, fish and fresh goat’s cheese: its freshness and fine bubbles bring out the flavours of the sea. Rosé Crémant de Limoux goes with smoked fish, sweet-and-savoury dishes and red berry desserts, complementing their fruitiness.

Made using the traditional method, with a second fermentation in the bottle, Crémant de Limoux comes from the upper Aude Valley, at the foot of the Pyrenees. As an apéritif: floral, crisp white cuvées

White Crémant de Limoux comes into its own as an apéritif: its liveliness and fine bubbles complement light canapés without overpowering them.

Héritage Year 825 Brut White: a blend of Chardonnay, Chenin Blanc and Pinot Noir. Golden-yellow in colour, with aromas of white flowers and hints of honey, green apple and toast; elegant and crisp on the palate. The winery recommends serving it as an apéritif at 10 °C.

Eternal Brut Red Code: a blanc de blancs made from Chardonnay, Chenin Blanc and Mauzac, from Limoux vineyards with an oceanic climate. Floral aromas and notes of pear and citrus; fresh and mineral on the palate. Another cuvée to enjoy as an apéritif.

With seafood and sushi: the crispness of a blanc de blancs

Oysters, shellfish, crustaceans or sushi call for a crisp white cuvée whose acidity complements their briny flavours. The fresh, mineral character of Eternal Brut Red Code makes it a natural choice: the winery recommends it with sushi. To keep the pairing balanced, opt for raw or simply prepared dishes with a squeeze of lemon rather than a strong sauce.

With fish: match the cuvée to the preparation

  • Fish in cream sauce: Red Code, whose freshness balances the richness of the sauce — a pairing recommended by the winery.
  • Delicately smoked fish: Héritage Year 825 Brut Rosé, which the winery recommends with smoked fish; its notes of red berries and toast complement the texture of the fish.
  • Grilled or raw fish: a crisp white such as Red Code or Héritage Year 825 Brut White.

With goat’s cheese

The freshness of a white Crémant balances the acidity of goat’s cheese. The winery pairs Héritage Year 825 Brut White with goat’s cheeses — Cabécou, Pélardon and Rocamadour — and Red Code with fresh goat’s cheese.

Aigle Impérial 2015, a vintage cuvée certified organic under the AB label and by Demeter, offers greater complexity: Chardonnay complemented by Chenin and a touch of Pinot Noir, with aromas of white flowers (jasmine and lily), lemon peel and white pepper, followed by a palate that opens up to yellow peach, toasted almond, toast and brioche notes. Its product page recommends serving it as an apéritif at 10 °C and also pairing it with goat’s cheese and sweet desserts.

With desserts and red berries: choose rosé

Rosé Crémant de Limoux complements the fruit flavours of a dessert.

Héritage Year 825 Brut Rosé: salmon-pink in colour, with aromas of strawberry and raspberry and notes of toast. The winery suggests serving it with red berry desserts, as well as sweet-and-savoury or spicy dishes.

Ballerina Starry Brut Rosé: Chardonnay and Pinot Noir; notes of strawberry and raspberry mingled with brioche, and a soft, creamy finish. The winery recommends serving it at 10 °C as an apéritif, with delicately smoked fish, sweet-and-savoury or spicy dishes, or red berry desserts.

Among the whites, Red Code pairs with a fresh fruit salad scented with basil, and Héritage Year 825 Brut White with sweet desserts.

A simple rule of thumb: the dessert should not be sweeter than the wine. Choose fresh, tangy desserts (red berry tart, strawberry salad or poached fruit) rather than very rich or caramelised pastries.
